Sugar Cookie with Icing

THE FRAGRANCE OF HOMEMADE COOKIES JUST out of the oven or the sight of a freshly filled cookie jar is enough to bring joy to the hearts of both children and adults. And munching on them while they're still warm is a pure delight. Children and adults alike adore sugar cookies. Add these treats to the buffet table, serve them to unexpected guests, or wrap them for a from-the-heart home-baked gift.

4 cups sifted all-purpose flour
1/2 teaspoon salt (optional)
1 teaspoon baking powder
1 cup (2 sticks) unsalted butter, at room temperature
2 cups sugar
2 large eggs
2 teaspoons pure vanilla extract

Makes 6 dozen cookies. Prep time: 30 minutes. Bake time: 10 minutes.

  1. In large bowl, sift together flour, salt and baking powder.
  2. In another large bowl, using a mixer, blend butter and sugar until fluffy, about 3 minutes.
  3. Beat in eggs.
  4. On low speed, add flour mixture.
  5. Stir in vanilla.
  6. Divide dough into three parts. Wrap each in plastic wrap; chill about 30 minutes.

Heat oven to 325 degrees. On floured surface, roll dough to 1/8 inch thick. Cut out cookies with floured cutters. Transfer to ungreased baking sheets; refrigerate until firm, about 15 minutes. Bake until edges start to brown, 8 to 10 minutes. Cool cookies on wire racks.

Royal Icing

1/4 cup meringue powder
1/2 cup cold water
1-pound box 10X confectioners' sugar

Makes 3 cups of icing. Total time: 15 minutes.

For icing: In large bowl, add meringue powder to cold water. Beat with mixer to soft peaks. Mix in sugar, a cup at a time. Beat until stiff peaks form.

STEP-BY-STEP TIPS 1. Assemble all ingredients. 2. Tint frosting by stirring in food coloring a small drop at a time. 3. Fill a pastry bag (store-bought or plastic sandwich bag) with frosting. Overlap sides of the bag to create a cone shape. Cut small corner from plastic sandwich bag. 4. Gently squeeze bag to decorate cookies with icing. Add sprinkles, nuts and candies.
